As an herbalist, the single herb that I have found the most impressive is lemon balm, also known as melissa officinalis or simply melissa.

Lemon balm (Melissa Officinalis) is part of the mint family. Its botanical name Melissa is taken from the Greek word for bee, indicative of the plant's attractive power for bees and useful insects of all kinds. The term "balm" refers to balsam, the ancient world's most important sweet-smelling oils. 

Lemon Balm has a delicate lemon flavor, and can be used in many dishes. The fresh leaves of the lemon balm plant can be used eye-catching garnish. The chopped fresh leaves of lemon balm can be tossed into a salad or added to a dish to add a lemony zest to sweet or tangy dishes. It combines well with allspice, bay leaves, mint, pepper, rosemary and thyme.

But Lemon Balm uses are not limited to culinary flavoring! Lemon Balm has been used with its health promoting properties for over 2,000 years to ease and stimulate the healing of such conditions as digestive upsets, sleep problems, depression, skin sores, repelling mosquitoes and ease the itching of insect bites, and ease muscle spasms and menstrual cramps.

Its primary use today is to stimulate the healing of viral infections of the skin, especially herpes, both genital herpes and cold sores.
